Smoked Salmon Tartlets

Ingredients:

  • 200g smoked salmon shavings
  • 12 capers, crushed (optional)
  • 3 eggs
  • 3 tsp skim milk
  • 1 tsp paprika
  • parmesan block and grater/shaver (microplane best)
  • salt and pepper to taste

Directions:

  1. Roll the pastry out and cut and shape to fit a 12-serve muffin (tartlet) tray
  2. Divide salmon between pastry tartlet shells
  3. Add capers
  4. Add paprika dusting (I put paprika in a pepperpot to use it, but you probably buy yours in something like that!)
  5. Shave parmesan into shells (just a couple of gratings is enough)
  6. Add salt (not much as it's seafood) and pepper (more!)
  7. Beat eggs and milk well and pour a little over each tartlet - topping up to only half full is good
  8. Bake 25 minutes at 180 celsius (but check after 20 - everyone's oven is different!)
  9. Cool on rack or serve hot
  10. Best with onion jam (one day I'll post my recipe) and fresh kiwi coleslaw
