Skillet Almond Coffee Cake

Ingredients:

  • 1 1/2 stick butter
  • 1 1/2 cup sugar
  • 1 1/2 cup flour
  • pinch of salt

Directions:

  1. Melt butter in mixing bowl and add sugar. Mix with wire whisk. Beat
  2. In eggs, one at a time. Stir in almond extract.
  3. Add flour and salt, mixing well with a spoon. Pour batter into a cast
  4. Iron skillet that has been lined with aluminum foil, dull side up.
  5. Scatter sliced almonds on top and sprinkle with sugar. Bake for 30
  6. Minutes at 350 degrees. Remove cake from skillet with the foil.
  7. When cool, peel foil off carefully. Serve cold or heat individual slices
  8. In microwave.
