Singapore Fried Rice and Veggies

Ingredients:

  • 2 cups rice (prepare day ahead and keep in fridge until ready)
  • 2 tbsp onions
  • 1 tsp butter
  • 1 egg
  • 2 tbsp soy sauce

Directions:

  1. Heat the oil and butter in a frying pan and fry the carrots and onions for 1-2 minutes.
  2. Move aside in the frying pan and add in the beaten egg, scramble until cooked.
  3. Stir in rice and add salt and sugar to taste.
  4. Combine in the fried onions and carrots.
  5. Stir fry until all combined.
  6. Serve hot with additional soy sauce as needed.
