Ingredients:

  • 2 sole fillets
  • 4 slices tomatoes
  • 4 slices red onions

Directions:

  1. Yogurt Dressing:.
  2. 2 tablespoons low-fat yogurt
  3. 1 teaspoon extra virgin olive oil
  4. Lemon pepper
  5. 1 teaspoon basil, dried
  6. Parsley
  7. Preheat oven to 450F or 230 degrees celsius.
  8. Prepare aluminum foil for quantity of fish that you will be using. If you double the recipe, then double the aluminum foil. Prepare the Yogurt Dressing on the side and refrigerate for at least a half an hour.
  9. Curl up the aluminum foil so that it will retain the juice from the Yogurt Dressing. Apply dressing on top of fish; some people put part of the dressing in the aluminum foil and then on top of the fish. Dress up your fish with tomatoes and onions on top. Close aluminum foil so that it can steam to perfection for about 5-7 minutes for fresh fish and 10-12 minutes cooking time for frozen. Temperatures will vary depending on the thickness of your fish.
