Simple Salmon Patties

Ingredients:

  • 1/2 can (8-oz) salmon
  • 1 tbsp flour
  • 1 tbsp corn meal
  • 1 tbsp pepper
  • 1 tbsp olive oil

Directions:

  1. Drain liquid from salmon, but allow salmon to remain moist (moist meat will allow for better binding of the dry ingredients). Empty about 8 ounces of meat into a bowl and fluff with fork. Remove bones if desired.
  2. Add remaining ingredients and stir to combine. Crushed crackers may be substituted for breadcrumbs, but watch the fat! If mixture is too crumbly to press into patties, add a little low-fat or skim milk until moist.
  3. Form into patties. Dust with a little extra cornmeal for more crunch, if desired.
  4. Bake in a 400 degree oven, saute in a dry, non-stick skillet, or grill until brown on the outside and crispy - whichever you like best!
