Ingredients:

  • 2 eggs
  • 1/4 cup sugar
  • 1/2 cup sugar (for caramel)
  • 2 tbsp water
  • 2 cups milk
  • 1/2 tsp vanilla
  • 1/2 tsp cinnamon
  • 1 pinch of salt

Directions:

  1. In sauce pan caramelize 1/2 cup sugar with 2 tbsp water until light brown in color.
  2. Pour caramel into ramekins, coating bottom and sides
  3. Over double boiler mix eggs and salt together while slowly adding in 1/4 cup sugar
  4. Add milk to the egg mixture while stirring constantly
  5. Stir in vanilla and cinnamon to mixture
  6. Fill ramekins and place in water bath.
  7. Put in oven set at 350 for 1 hr
