Ingredients:

Directions:

  1. Preheat oven to 425 degrees F.
  2. Pour the broth into a roasting pan.
  3. Place the eggplant slices into the pan, lightly coating them on both sides with the broth.
  4. Bake for 10 minutes.
  5. Turn eggplant slices over, and bake for another 10 minutes.
  6. Add lemon juice and let set for a few minutes.
