Shrimp, Tomato and Basil Pasta and Recipes for a Complete Meal

Ingredients:

Directions:

  1. Season shrimp with salt and pepper.
  2. In a large skillet, heat 4 teaspoons of the oil over high heat.
  3. Add shrimp and cook until opaque throughout, turning occasionally. About 3 minutes.
  4. Transfer shrimp to a bowl and set aside.
  5. In the same skillet add remaining 2 teaspoons of oil and garlic.
  6. Cook over medium heat until fragrant. About 30 seconds.
  7. Add canned tomatoes and the juice along with the water.
  8. Bring to a boil.
  9. Reduce heat and simmer, stirring occasionally, until tomatoes have softened and are saucy. About 15 minutes or until desired thickness.
  10. Stir in grape tomatoes.
  11. Meanwhile in a large pot of boiling salted water, cook pasta until al dente.
  12. Drain and return pasta to pot.
  13. Add tomato sauce, shrimp and basil.
  14. Toss and serve immediately.
