Shrimp Tapas in Sherry Sauce

Ingredients:

Directions:

  1. Cook bacon in lg. skillet, over med. heat until brown and crispy. Remove from skillet with slotted spoon.
  2. Drain on paper towels. Set aside.
  3. Add oil to bacon drippings in skillet.
  4. Add mushrooms. Cook and stir 2 minutes.
  5. Add shrimp and garlic. Cook and stir 3 minutes, or until shrimp turn pink and opaque.
  6. Stir in Sherry, lemon juice, and red pepper flakes.
  7. Remove shrimp to serving bowl with slotted spoon.
  8. Cook sauce 1 min., or until reduced and thickened.
  9. Pour over shrimp.
  10. Sprinkle with reserved bacon.
