Shallot Vinaigrette

Ingredients:

  • 2 large shallots
  • 1 tsp sugar
  • 1/4 tsp salt
  • pepper , to taste
  • 2/3 cup vegetable oil
  • 2 tbsp olive oil

Directions:

  1. Place parsley in a food processor fitted with metal blade and with the machine, running, drop shallots through feed tube and mince.
  2. Add remaining ingredients and process briefly.
  3. Taste and adjust any seasonings.
  4. Use this on mixed greens salads.
