Ingredients:

  • 1/2 cup butter
  • 1 1/4 cups sugar
  • 1 tsp salt
  • 1 (15 oz) can pumpkin
  • 1 egg
  • 1 tsp vanilla
  • 2 cups flour
  • 1 (10 oz) package butterscotch chips

Directions:

  1. In a large mixing bowl, beat butter with an electric mixer on medium to high speed for 30 seconds. Add the sugar, baking powder, baking soda, cinnamon and salt; beat until well combined.
  2. Beat in the pumpkin, egg and vanilla. Beat in as much flour as you can with the mixer. Stir in any remaining flour with a wooden spoon. Stir in butterscotch pieces.
  3. Drop by rounded teaspoons onto an ungreased cookie sheet. Bake in a 375 oven for 8 - 10 minutes or until edges are lightly browned. Remove cookies and cool completely on a wire rack.
  4. Makes 60 cookies.
