  • Schiacciata - Classic Tuscan Flatbread
lukewarm water (90of to 100of) and
    8 More
lukewarm water (90of to 100of), dry yeast or two 0.6-oz packages fresh yeast, crumbled, all purpose flour (i use king arthur bread flour), extra-virgin olive oil, coarse sea salt, note: i have found that adding anywhere from 1-2 tsp. of salt (table salt works just fine) to the flour while making the dough works as good or better than the coarse salt on top. it depends on your taste. i would suggest adding 1 tsp. of salt to the flour and maybe lightly adding the coarse salt before baking. or forgo the coarse salt altogether and add 1.5 tsp of salt to the flour for the dough. bread does needs salt to have a good taste., note 2: drizzle with olive oil before baking., note 3: you can knead with a little olive oil to keep from adding more flour and prevent dryness., add herbs of your choice and/or a grated favorite cheese. i have used rosemary, oregano, basil, red pepper flakes, cracked black pepper, asiago, and parmesan in various combinations and it all worked out well.

you will need, roasted bell peppers( you can use jarred, if you like ), toasted walnuts ( i used a combination of pecans and walnuts... that s what i had), cumin (you can add more if you like), paprika ( or smoked ...or tomato paste), chipotle powder (or a sprinkle of chile flakes), garlic cloves, balsamic vinegar ( or pomegranate molasses, if you can find it), kosher salt to taste, olive oil ( +/-), sugar/honey, toasted whole grain bread crumbs( optional...i didn tsp use ), warm water to thin it out, place all the ingredients in a blender/food processor....except the warm water ., blend/process until fine. add more olive oil , if you like. this thins it out a bit and adds flavor as well. you can also thin out the dip by adding some warm water. blend/process again. taste and adjust seasoning. you can add more spice, seasoning or acidity according your taste. i chose not to use the bread crumbs, but the original recipe usually adds it. so feel free to do so. serve with pita chips, vegetables or even use it as a marinade for grilled meats.

    12 More
first , cut your shark into small, thick pieces, about an inch or an inch square. you are trying to make big bite size pieces so they will cook right but can be picked up and eaten easily., next , melt about a stick of butter (more or less depending on how much you are making) with about a tbsp of olive oil in a large bowl - you can do this in the microwave or on the stove and then reserve into a large bowl. let the melted butter/oil cool but do not let it re-solidify., coat the pieces well with kosher salt and ground black pepper. set aside to allow the bites to come up to room temp if they were in the fridge or on ice., ok now it is time to make the spice mixture for the bites. you will want to make enough to liberally cover the bites, but not too much that you are wasting all your spices. how much you need depends on how many bites you are making., in a small bowl, combine roughly equal parts of the following, paprika, chipotle powder, ground cumin, garlic powder, ground mustard, ginger powder, add to this some amount of chili powder and cayenne pepper. this will considerable heat, so adjust how much you to your and your guest s tastes. (note - you could forget all of these spices and just coat with your favorite blackened or cajun seasoning, but it won tsp taste as good of course).
