    15 More
chopped fresh cilantro, minced fresh garlic, minced jalapeno pepper (seeds and veins may be removed) skin removed, unsalted butter (reserve 1 tbsp for saute), chicken stock, freshly-squeezed lime juice, gold tequila , flamed, heavy cream, red onion, thinly sliced, red bell pepper, thinly sliced, yellow bell pepper thinly sliced, green bell pepper, thinly sliced, dry spinach fettuccine or 2 lb fresh, chicken breast, diced 3/4 inch, soy sauce, peel a jalapeno , heat about a quarter cup of olive oil in a saute pan over medium-high heat until the oil shimmers. add the jalapeno and roll it around until the skin is blistered on all sides. remove the jalapeno from the pan and robe with a paper towel -- the skin will come right off. use the olive oil for other dishes -- it is infused with jalapeno flavoring, fastest way to flame the tequila is to pour it into a wide glass, and light a match. when the flame dies out it is done. alternately you may use a small saute pan.

  • Homemade Corn Tortillas
masa flour (loose packed), salt, water and
    8 More
masa flour (loose packed), salt, water, tip... you can add some chopped cilantro and a bit of lime juice to the dough for an even better flavor, in a bowl mix ingredients until the dough comes together about 2 minutes ., if the dough feels dry add a tbsp of water at a time. you want to knead it a bit... for a minute or so. it will be the consistency of sandy play dough., divide dough into 16 parts. cover with a damp towel. if you have a tortilla press, line it with 2 sheets of plastic wrap. place each ball between the plastic wrap and press until tortilla measures about 5 to 6 in in diameter. peel plastic wrap carefully. if it tears just press together again to seal. if you are careful, it just peels off., if you don tsp have a tortilla press do what i do and roll the balls between 2 sheets of plastic wrap using a rolling pin., preheat a skillet on medium -high. you may want to heat 2 skillets if you can work quickly like i did to speed the process up a bit. cook tortillas 1 a at a time for 50 seconds or so ., turn on second side and cook for an additional 50 secs or so., cover tortillas...i usually cover with plastic wrap so that the heat steams them up a bit and they do not dry out. use in your favorite dish...enchiladas tacos, etc.

i had input from several great friends who took their time to help in the search., on g, juels , tink, danadooley and magandab., cherylann from ez cooking, thanks to all for you time and help. jessica harlan a very busy person took time to research pans and sent me several emails, thank you for taking your time to help a stranger., magandab sent me a link on g for a pan at target and since i pass it often and by chance the day she sent her message on gr, i stopped and checked the pan made by calphalon., very heavy, straight sides so it would be easy to attach a candy thermometer and a glass lid with a dip lip with strainer capability., what an incredible pan for $60. why; i am able to put the butter and sugars into the pan and not worry about burning! i made toffee again last night and to really test it, set the temp 1 line about medium on the electric stove. i would stir about every 10 minutes and then do something else; well i was making a cheese cake while the toffee cooked. every time i checked, it was boiling up, stir and i could feel nothing sticking to the bottom and burning like my old copper bottom revere ware steel 3 quart pot., how great to not have to worry about the mixture burning. this is a 4 quart pot. just perfect for the amount of butter and sugar to boil and become a food that should be reserved for the gods., i placed a mat over the pot as it boiled as the cool air was affecting the rise in temperature. the notch in the side for pouring let me leave my bamboo spoon in pot, the thermometer clipped to the side. once the mix reached 285 i poured the mix into the pan and it was so cool to see how the very last bit slipped right out of the pan. this is a fantastic pot for making toffee and recommend without reservation the purchase of this pot by calphalon., double thanks to magandab for sending me to my perfect candy pan. eating my toffee makes see s toffee-ettes taste like dirt, this is the link magandab sent me, http://www.target.com/kitchen-essentials-calphalon-hard-anodized-straining/dp/b000jm34km/qid =1234998462/ref=br_1_4/192-4549105-5227516 ie=utf8&node=11082001&frombrowse=1&rh=&page=1

did you know that if you want to add vegetables to the soup you are making, they will taste so much better if you saute them first in a little butter. even though it s a little bit more work, it s worth the extra effort., what happens when you boil the soup too long the soup ends up losing its color ., i burned my soup once. have you ever done that here s a great tip to fix that. take the liquid part of your soup and pour it into a new, clean pan. then, add these ingredients: mustard, curry powder, chutney, or your 1 other of your favorite flavors. quantities are always to taste and you ll be amazed at how this tip really works, my all time favorite soup tips. every made soup that was too salty tasting all you need to do is place a raw potato into your soup pot and simmer it with the soup for about 15 minutes. not only does the potato slice absorb the extra salt, but as an added snack for the cook, it also absorbs all that flavor and becomes a fantastic taste treat, need your soup to be thicker - just sprinkle a little bit of instant mashed potato and stir in to thicken the soup. carefully continue adding the instant potatoes until you get the consistency that makes you happy., in a hurry and need to use canned broth instead of homemade give it a little extra flavor by taking your leftover chicken or meat bones and simmering it in the broth. simmer for about 15 minutes. then, strain the liquid and use the newly-flavored broth for your soup. this is a fantastic way to spice up the tinny flavor of canned broth and make it taste like its homemade., guess what a great resource a grocery store is for ready -to-use ingredients! simply make a visit to the salad bar (most large grocery chains have them now,) and gather up some of the pre-cut vegetables, cooked shrimp, and chicken or meat. how easy is that, if you have any leftovers of the pasta you cooked the night before , or even meat and vegetables - use them for instant nutritious substance for your soup. if your left over vegetables have already been cooked, simply puree them and use it as a thickener. deeeelish
