Ingredients:

Directions:

  1. Preheat oven to 325 degrees F.
  2. Line a cookie sheet with parchment paper.
  3. In a large bowl, cream together the butter and sugar until smooth.
  4. Stir in the egg and flour until well blended.
  5. On a lightly floured surface, knead to form a soft, smooth dough.
  6. Roll dough on a floured surface or between sheets of wax or parchment paper to about 1/8 inch thickness.
  7. Cut out circles with a floured cookie cutter (about 2 inches in size and place them 1 inch apart on a lined cookie sheet.)
  8. Bake for approximately 10 to 15 minutes or until cookies are slightly golden around the edges.
  9. Remove from oven and allow to cool completely.
  10. Once cookies are cool, spread the bottom of one cookie with about 1/2 teaspoon of cherry jelly.
  11. Place another cookie over the jelly.
  12. Then spread cookies with icing.
  13. Place a cherry half in the center of each cookie.
  14. Makes approximately 1-1/2 dozen, depending on the size.
  15. ICING:
  16. 1 cup powdered confectioners' sugar
  17. 4 tablespoons butter, softened
  18. 1/2 teaspoon pure vanilla extract
  19. A pinch of salt
  20. 1-3/4 tablespoons milk (roughly)
  21. Method:
  22. In a small bowl mix together sugar, butter, vanilla and salt.
  23. Add just enough milk to spreading consistency.
