Ingredients:

  1. Heat oven to 350 degrees F. Spray a 9-inch pie dish with cooking spray.
  2. Mix the reserved pastas together with half the mozzarella, scallions, and the reserved bacon. Pat the pasta mixture into the pie dish. Whisk the eggs with the milk, half the Parmesan cheese, and salt and pepper to taste. Pour egg mixture over the pasta and sprinkle with the remaining mozzarella and Parmesan cheese. Place dish on a baking sheet and bake until set and the top is browned and bubbling, about 30-35 minutes. Allow to rest for 15 minutes before serving.
  3. While the pie is baking, make the sauce: Combine the tomatoes, olive oil, basil, and salt and pepper to taste. Spoon the sauce over slices of the Noodle Pie.
  4. TIP: Tossing the eggs in the heated pan will help to cook the eggs, and will also keep them from scrambling, resulting in a creamy delicious sauce.
