Ingredients:

Directions:

  1. Prick the sausages and simmer in boiling water for 10 minutes.
  2. Meanwhile fry the chopped bacon in a large skillet until it is half cooked, remove, drain on paper towel, remove all but 1 tbsp of bacon grease from the pan.
  3. Add onions an saute over medium high heat until they are transparent, add mushrooms.Saute 5 minutes.
  4. Drain the sausages and cut into bite size pieces.
  5. Add sausages to the pan turn heat to medium and continue cooking until the sausage is well browned and the onions & mushrooms are golden.
  6. Add oregano, garlic & chili flakes. mix well.
  7. Add bacon, peppers & Tomatoes. Only cook until they are heated through about 6 minutes.
  8. Add wine (water) and allow to steam for 2 minutes.
