Sausage & Applesauce Stuffed Acorn Squash

Ingredients:

  • 2 large acorn squash
  • 1 lb loose sausage meat
  • 1 tsp salt
  • 1/2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 2 cups applesauce

Directions:

  1. Preheat oven to 400 degrees F.
  2. Cut squash in half, remove pulp and seeds.
  3. Bake cut side down on greased baking sheet for 30 minutes.
  4. Shape sausage meat into 12 balls.
  5. Remove squash from oven. Turn over and sprinkle with spices.
  6. Fill each squash half w/ 1/2 cup applesauce and 3 sausage balls.
  7. Bake for another hour at 350 degrees F.
