Ingredients:

  • 7 1/2 cups warm water
  • 14 cups wheat flour
  • 1 1/3 cups sugar
  • 1/2 cup olive oil
  • 2 tbsp sea salt
  • 4 tbsp yeast

Directions:

  1. Grind 14 cups red or white wheat flour.
  2. In a mixer (Bosch, KitchenAid etc) put 7 1/c cups warm to hot water. Then add sugar, oil and salt. Mix to combine.
  3. To this mixture, add 7 cups flour and sprinkle 4 TBS yeast on top of flour.
  4. Mix for 4 to 7 minutes until dough begins to form and separates from sides of the bowl.
  5. Place dough into large bowl greased with olive oil and knead by hand gradually mixing in the remaining 6 to 7 cups of flour. Approximately 7 to 10 minutes. (Dough should be soft. Don't add too much flour or the dough will be dry and crumbly)
  6. Cover and let double in bulk.
  7. When double divide dough into 5 sections. Place each in a 1.5 lb greased loaf pan. Let rise again in warm, draft free place.
  8. When dough rises, bake in 350 degree oven for 35 minutes.
  9. Cool and remove from pans.
