  1. Preheat oven to 375 degrees.
  2. In a large mixing bowl beat butter with electric mixer on medium to high speed for 30 seconds.Add granulated sugar, brown sugar, baking powder, baking soda and cinnamon.Beat until combined, scraping sides of bowl occasionally.Beat in egg and vanilla until combined.Beat in as much of the flour you can with the mixer.Stir in any remaining flour.Stir in rolled oats, coconut and optional chocolate chips.
  3. Drop dough by rounded teaspoons 2 inches apart onto an ungreased cookie sheet.Bake for 7 minutes or until the edges are goldeen.Cool on the cookie sheet for 1 minute and transfer to a wire rack and let them cool till ready to bag or etc.
  4. Make about 60 cookies
