Saffron Rice with Tomatoes and Fresh Oregano

Ingredients:

Directions:

  1. Fill a medium saucepan with cold water.
  2. Add saffron and 2 tablespoons salt.
  3. Bring water to a boil.
  4. Stir in rice, and cook until rice is tender, 12 to 14 minutes.
  5. Remove from heat, and drain well.
  6. Place rice in serving bowl.
  7. Add butter and tomatoes, and toss very gently.
  8. Season with salt, pepper, and fresh oregano.
