Russian Cucumber Olive Salad

Ingredients:

  • 2/3 cup pitted olive
  • 1/3 cup oil
  • 2 tbsp vinegar

Directions:

  1. Cut peeled cucumbers lengthwise, remove seeds, and slice thin.
  2. Sprinkle with mint, chopped olives, sliced peppers and salt.
  3. Combine oil and vinegar; Dress salad.
