Rolled Oats Cake

Ingredients:

  • 1 cup oats
  • 1-1/4 cup boiling water
  • 1/2 cup shortening
  • 2 eggs
  • 1 tsp vanilla
  • 1-1/2 cups flour
  • 1 tsp soda
  • 1/2 tsp baking powder
  • 1 tsp cinnamon
  • 1/2 teaspon nutmeg
  • topping
  • 5 tbsp oleo
  • 1/2 cup milk
  • 1/2 cup coconut

Directions:

  1. Mix oats and boiling water then allow to stand 20 minutes.
  2. Cream together shortening, sugars, eggs and vanilla.
  3. Combine cooled oat mixture, flour, soda, baking powder, cinnamon and nutmeg together.
  4. Combine with shortening mixture.
  5. Pour into greased rectangular cake pan.
  6. Bake at 350 for 35 minutes.
  7. Boil oleo, brown sugar and milk for 7 minutes.
  8. Stir in coconut and pecans and pour over warm cake.
