Rocky Road Chocolate Cake

Ingredients:

  • 2/3 cup of butter
  • 11/3 cup of surar
  • 3 eggs
  • 21/4 cup flour
  • 1 cup buttermilk or, if you have no , add 1tsp vinegar to a cup of regular milk
  • 1 tsp. soda
  • 3 tsp. butter, soft
  • 1 package. powered sugar
  • 1/2 cup chopped nuts
  • 1 cup miniature marshmallows

Directions:

  1. Cake..Cream butter, sugar and eggs.
  2. Add Chocolate
  3. Add flour, soda and salt alternately with flour and milk
  4. Pour into 9x12 pan. That has been sprayed with Pam. Bake at 350 degrees for 40-45 minutes. Let cool and loosen edges.
  5. Icing...In double boiler melt chocolate with butter
  6. Sift sugar in bowl. Add milk and Vanilla.
  7. Add Chocolate and butter.
  8. Sprinkle cake with marshmallows and nuts.
  9. Pour hot icing over all. Maybe topped with cherries and whipped cream.
