Roast Chicken With Rumrunner's Glaze

Ingredients:

Directions:

  1. Preheat the oven to 350°F.
  2. In a large skillet, heat the oil over medium heat. Stir in the onions and garlic, and cook for 8 to 10 minutes, or until golden.
  3. Pour mixture into a 9 x13 baking dish; pour the chicken broth over the onion mixture and place the chicken on top.
  4. Mix together the rum, vinegar, brown sugar, cloves, cinnamon, ground red pepper, and salt to make a glaze.
  5. Brush half the glaze over the chicken, and bake for 30 minutes.
  6. Drizzle the remaining glaze over the chicken and bake for an additional 40 to 45 minutes.
