Ingredients:

  • 1/2 lb flour
  • 1 1/4 tsp cream of tartar
  • 3/4 tsp baking soda
  • 1/2 tsp salt
  • 3 tbsp butter
  • 1/2 cup raisins
  • 1/4 tsp ginger
  • 2 eggs
  • 1 egg , for glaze (optional)

Directions:

  1. Mix flour, cream of tartar, baking soda and salt together in a large bowl.
  2. Cut in butter with pastry cutter or 2 knives until mixture resembles bread crumbs.
  3. Stir in raisins and sunflower seeds.
  4. Combine eggs and ginger.
  5. Add beaten eggs to the flour mixture, mixing well to form a soft dough, add a little milk if dough is too stiff.
  6. Lightly flour a work surface.
  7. Turn out dough and kneed until smooth.
  8. Roll dough out to approx 1/2in.
  9. Cut dough into 2in rounds.
  10. Place biscuits onto a greased cookie sheet and brush each one with an egg glaze (if using).
  11. Bake at 400F for 10-15 minutes or until golden brown and well risen.
