Rhubarb Sticky Muffins

Ingredients:

  • 1/4 cup butter
  • 1/2 cup brown sugar
  • 1/3 cup butter
  • 1/3 cup sugar
  • 1 egg
  • 1 1/2 cup flour
  • 1/2 tsp. salt
  • 1/2 tsp. nutmeg
  • 1/2 cup milk

Directions:

  1. Combine rhubarb, 1/4 cup butter and brown sugar in small bowl and mix with fork until blended. Put in bottom of 12 large greased
  2. Muffin cups.
  3. Beat 1/3 cup butter, sugar and egg until fluffy. Sift flour, baking powder, salt and nutmeg. Add to butter-sugar mixture
  4. Alternately with milk. Stir just to blend then spoon on top of
  5. Rhubarb.
  6. Bake in preheated 350 degree oven for 20-25 minutes. Invert
  7. Pan on rack and let stand for 3 minutes. Remove pan. Serve warm.
