Quick Easy Roast Tomato Pasta

Ingredients:

Directions:

  1. Preheat Oven to 200°C.
  2. Place Tomatoes, Garlic, Mushrooms and Zucchini onto into large roasting pan. Season and add enough oil to give a nice coating on each bit ( a couple of tablespoons or so). Give the pan a bit of a stir so the garlic is mixed though and everything is nicely coated. Place in Oven. Will take about 20-25 mins, give tray a bit of a shake at 15 minute mark.
  3. Cook pastas as per directions on packet.
  4. Lightly saute onion in small frypan and set aside.
  5. When tomatoes etc are done remove mushroom and zucchini and set aside with onion. Quickly run a potato masher through tomatoes left in pan, they should just crush away to make your sauce.
  6. Stir mushroom, zucchini, onion and basil back through tomato sauce., check seasoning. Then stir the tomato and vegetable sauce through drained pasta.
  7. Serve with cheese on top.
