Ingredients:

  • lime custard(recipe below)
  • lime custard
  • 1 cup sugar
  • 1-1/2 tbsp lime zest
  • 1/2 cup farm fresh butter ( real ,no sub. please)
  • place sugar , zest ,juice in pan over flame, bring
  • remove from heat.
  • temper egg yolks with a small amount of the hot liquid,whisking.
  • place over same heat and (this is where you'll need good biceps)
  • beating constantly for about 12 minutes,mixture will have the look and feeling of pudding.
  • add chunks of butter ,a little at a time,beating constantly,until butter melts and the two mixtures are blended.
  • remove from heat.
  • pour mixture through open weave cloth.
  • cover.
  • chill for about four hours.

Directions:

  2. Melt white chocolate.
  3. Beat cream cheese until fluffy.
  4. Combine with the creamy melted white chocolate.
  5. Beat until blended.
  6. Add your tart and tangy,melt in your mouth,soft custard.
  7. Beat until blended.
  8. Spoon into prepared lightly tanned tart shells.
  9. Smooth.
  10. You must chill for at least 4 hours.
  11. Sprinkle candied lime peel on top.
  12. Serve.
  13. Enjoy.
