Pumpkin Pie Squares Deluxe

Ingredients:

  • 1/2 cup oatmeal
  • 1 cup flour
  • 1/2 cup brown sugar
  • 1/3 cup butter
  • 1 (16 oz) can pumpkin
  • 1 (12 oz) can evaporated milk
  • 2 eggs
  • 3/4 cup sugar
  • 1/2 tsp salt
  • 1 1/2 tsp cinnamon
  • 3/4 tsp ginger
  • 1/4 tsp clove
  • 1/3 cup brown sugar
  • 2 tbsp butter

Directions:

  1. Mix crust ingredients and firmly pat into a 9x13 butter dish.
  2. Bake at 350 degrees for 10 minutes.
  3. Make topping and set aside.
  4. Mix filling ingredients, mix well pour onto the crust.
  5. Bake 20 minutes.
  6. Sprinkle topping on top of pumpkin, and return to oven for an additional 20 minutes or till set.
  7. Serve with whipped cream sprinkled lightly with nutmeg.
