Ingredients:

  • 3/4 cups white sugar
  • 1/2 tsp baking powder
  • 2 tsp ground cloves
  • 1/2 tsp ground ginger
  • 1/2 tsp cardamom
  • 1 tsp salt
  • 2/3 cup applesauce
  • 3 eggs

Directions:

  1. Preheat oven to 350 degrees F (175 degrees C). Grease 12 muffin cups or line with paper muffin liners.
  2. In a large bowl, stir together flour, sugar, baking soda, baking powder, spices and salt. In a separate bowl, beat together 2 cups pumpkin puree, applesauce and eggs. Stir pumpkin mixture into flour mixture until smooth. Scoop batter into prepared muffin cups.
  3. Bake in preheated oven for 20 to 25 minutes, until a toothpick inserted into the center of a muffin comes out clean.
  4. Should make around 12 good size muffins with just a little leftover (I put the extra in a mini loaf pan and baked it with the muffins..it's about the size of a muffin).
