Puffy Tuna & Rice Casserole [2011-04-03 15:42:58.383]

Ingredients:

  • 1/3 cup butter
  • cheese slices
  • 1/4 cup flour
  • 1 tbsp lemon juice
  • 1 1/2 cup milk
  • 1/4 tsp pepper
  • 1 tsp salt
  • 1 can tuna

Directions:

  1. Make a sauce by melting butter, adding flour and seasonings, then gradually stir in milk.
  2. Cook, stirring until thickened and smooth.
  3. Beat egg yolks slightly, add a little sauce, and mix thoroughly. Stir mixture into remaining sauce and cook 2 minutes longer over low heat, stirring constantly.
  4. Remove from heat. Fold in tuna, onion, lemon juice, and rice.
  5. Beat egg whites until stiff but not dry. Fold into tuna and rice mixture. Pour into a deep casserole dish.
  6. Cut cheese slices into strips and arrange on top of casserole. Place dish in a pan of hot waters.
  7. Place in oven and bake at 350 degrees for about 40 minutes.
