Ingredients:

Directions:

  1. In medium non-stick skillet, heat bacon fat.
  2. Add onion and green pepper and saute until onions are translucent.
  3. Remove from skillet.
  4. Add cubed potatoes into pan, adding more bacon fat, if needed.
  5. Use a nylon or rubber spatula so as not to crush the potato cubes. Stir and saute over medium heat until potatoes just start to brown, about five minutes.
  6. Return onions and peppers to pan.
  7. Add Worcestershire sauce, salt and pepper, 2 tablespoons freshly chopped Italian parsley, stirring to mix everything together.
  8. Saute for approximately five more minutes.
  9. Add last tablespoon fresh parsley, stir to mix, and serve.
