Potato Skin Pizzas

Ingredients:

  • 1/2 cup pizza sauce
  • 20 -40 slices pepperoni , the mini slices (my kids prefer sliced hotdogs instead)

Directions:

  1. Pierce potatoes with a fork and microwave on high for 5 minutes. Turn over and cook another 3-5 minutes or until tender. Let them cool enough to handle.
  2. Preheat broiler.
  3. Cut potatoes in half lengthwise. Scoop out potato leaving a bit of a border, about 1/3 of an inch. (Save scooped out potato for something else, like a mashed potato salad!).
  4. Place potatoes on a baking sheet. Spread 1 Tbsp pizza sauce over each potato. Top with whatever toppings you like.
  5. Broil for about 5 minutes or until it's melted and lightly browned!
  6. Optional toppings can include:.
  7. Ham.
  8. Hot dog weiners, sliced.
  9. Leftover BBQ chicken,.
  10. Broccoli.
  11. Zucchini slices.
  12. Cheddar cheese.
