Ingredients:

  • 1 medium sized potato
  • 1 (20 oz) bag powdered sugar

Directions:

  1. First, poke several holes in the potato and place in the microwave for about ten minutes or until soft (like a baked potato).
  2. Let cool a little so you can touch it, then remove the skin.
  3. Mash the potato until smooth and no chunks are left.
  4. Slowly pour in powdered sugar and mix with potato.
  5. There is really no measuring, but it usually takes the entire bag if it is not a small potato; the goal is to get it to the consistency of pizza dough.
  6. After mixing the bag of powdered sugar with the potato, roll the dough out on wax paper with a rolling pin until it is about 1/4 thick.
  7. Smear peanut butter over the top of the dough evenly.
  8. Roll the entire dough up (like a newspaper) to create layers of dough and peanut butter.
  9. Cut into desired sections and enjoy!
