Ingredients:

Directions:

  1. In a dutch oven or large heavy bottomed sauce pot, heat oil until hot.
  2. Season the flour with salt& pepper.
  3. Dredge meat on both sides in flour Shake off excess flour.
  4. Place meat in oil and sear for about 5 minutes.
  5. Turn meat over to sear the other side for about 5 minutes.
  6. Drain off excess grease but don't scrape the pot.
  7. You want the brownings for flavor.
  8. Place all remaining ingredients into the pot except potatoes.
  9. Simmer covered over low heat for 1 1/2 hours.
  10. Add potatoes and simmer for another hour.
  11. Season to taste.
