Plantain Nut Bread

Ingredients:

  • 1/3 cup butter ( shortening)
  • 2/3 cup sugar
  • 1/4 tsp lemon juice
  • 1 3/4 cups flour
  • 2 1/4 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup chocolate chips (optional)

Directions:

  1. Cream together butter and sugar
  2. Mix in lemon juice and eggs
  3. In separate bowl, mix flour, salt and baking powder
  4. Slice and fry plantains then mash it up to a pulp
  5. Mix plantain with butter-sugar-eggs
  6. Gradually add flour mixing well
  7. When all flour is mixed in, add chopped nuts (and chocolate chips)
  8. Mix well
  9. Bake 1 hour 350 degrees.
