Ingredients:

Directions:

  1. Mix yeast, water and sugar.
  2. Set aside.
  3. In a large bowl, combine flour, dried milk and salt.
  4. Pour oil and water and mix well.
  5. You might require more flour or water, depending on the absorbency of the flour.
  6. Knead dough gently and not for too long.
  7. Divide into 18 egg sized balls.
  8. Place on a floured surface, cover and let rest for 25 -30 minutes.
  9. Roll one ball out and cook it in a skillet until bubbles form on top.
  10. Flip pita over and cook the other side for a few more minutes.
  11. Keep bread warm by wrapping in a towel or placing in a pre-heated 250 degree oven while cooking the rest of the bread.
  12. These freeze very well.
  13. Note: I like to add a small handful of chopped or sliced green olives to the dough.
