Pistachio-dusted Date And Chevre Truffles

Ingredients:

Directions:

  1. Mix together the cheeses with a fork.
  2. Add cassis and a pinch of salt.
  3. Mix until smooth.
  4. Chill for 30 minutes.
  5. Measure about 1 tablespoon cheese mixture.
  6. Press a date half into the mixture.
  7. Cover date and chevre with plastic wrap.
  8. Using plastic wrap, make a ball of cheese around date, keeping date half inside the cheese.
  9. Remove plastic wrap.
  10. Continue process with remaining dates and cheese.
  11. Spread ground pistachios on small plate.
  12. Season with a touch of salt and pepper.
  13. Roll each chevre truffle in pistachios to coat evenly.
  14. Refrigerate, covered, until serving.
