Ingredients:

Directions:

  1. In a skillet, toast coconut until golden brown, about 4-5 minutes.
  2. Set aside.
  3. In a large pot, stir cream, coconut milk, sugar and rum over medium-high heat until sugar is completely dissolved, about 3 minutes.
  4. Remove from heat.
  5. Using a whisk, stir in yogurt, Cream Cheese and sour cream, until mixture is smooth and creamy.
  6. Stir in pineapple and coconut.
  7. Pour mixture into a non-stick 9x13 pan.
  8. Freeze uncovered for 2 hours.
  9. Cover with foil and freeze for another 2 hours.
  10. Purée ice cream in blender until smooth, about 30 seconds.
  11. Transfer to a bowl and freeze for another 1-2 hours
  12. Serve & eat
