Ingredients:

  • 3/4 cup cider vinegar
  • 1 1/2 tsp coarsley ground black pepper
  • 2 tsp salt
  • 1/2 tsp sugar
  • 3/4 tsp dry mustard
  • 1/4 tsp coriander
  • 1/2-3/4 cup olive oil
  • 1 1/2 lbs large shrimp
  • 1 medium onion , halved lengthwise and sliced
  • 1 lemon , slice thin
  • 2 tbsp fresh dill or 2 tbsp parsley

Directions:

  1. Whisk the first 8 ingredients together (vinegar through coriander) and add oil in a stream.
  2. Whisk until emulsified.
  3. Stir in garlic and bay leaf.
  4. Cook shrimp in boiling water one minute.
  5. Shell and devein and add to marinade.
  6. Let cool and stir in onion and lemon. Marinate covered and chilled 12-24 hours.
  7. Garnish with dill or parsley.
  8. Serve icy cold in a glass bowl or in martini glasses for individual servings.
  9. Enjoy!
