Pesto Focaccia Sandwiches

Ingredients:

  • 1 tsp prepared pesto sauce (, of course, you could make your own!)
  • 4 oz fresh mozzarella cheese, sliced ( look for this in the specialty cheese section of your grocery, or you could use part-skim mozzarella)
  • 1 large ripe tomato

Directions:

  1. Slice bread lengthwise into 2 halves.
  2. Combine mayo and pesto, spread on each side of bread.
  3. Add cheese and tomato.
  4. Put top piece of bread back to form sandwich.
  5. Cut into 4 wedges.
