Peppermint Chocolate Cheesecake

Ingredients:

  • 1/3 cup melted butter
  • 1/2 cup sour cream
  • 1/3 cup cocoa
  • 1 cup sugar
  • 3 eggs
  • 1 tsp vanilla
  • peppermint extract
  • 1 tbsp brandy (optional)
  • 2 cups sour cream
  • 1/2 cup sugar
  • 1 tsp vanilla

Directions:

  1. Preheat oven to 350 degrees.
  2. Mix together cookies and melted butter.
  3. Press into 9 springform pan.
  4. Bake 5 minutues.
  5. In a large bowl mix cream cheese and sour cream for at least one minute.
  6. Add sugar, cocoa, mixing well.
  7. Add eggs, one at a time.
  8. Mix well.
  9. Add flavorings and adjust peppermint oil.
  10. Pour into pan and bake 30-40 minutes until center is just set.
  11. Let stand for one hour.
  12. Preheat oven to 425 degrees.
  13. Mix sour cream, sugar and vanilla.
  14. Pour over chocolate cream cheeselayer.
  15. Smooth on top and bake for 5 minutes.
  16. Cool to room temperature, cover and refrigerate overnight before serving.
  17. Remove from pan and garnish with candy canes.
