Ingredients:

  • 1 cup rice flour
  • 1 pinch salt
  • 3/4 cup water
  • pepper (don'tsp be afraid to add a little kick)

Directions:

  1. This one is a beauty. Lime seems to go with almost everything. Putting them into fish batter just makes sense. This is a quick and easy batter to put together. If you are a lime fan – give it a whirl! It makes enough for about 2 pounds of fillets.
  2. Mix the ingredients well in a bowl ensuring all the lumps have been removed. Pat fish dry before dipping in the batter. Fry until golden brown.
