Directions:

  1. Preheat oven to 350 degrees.
  2. Toast and chop nuts, bring butter & eggs to room temp
  3. Line trays with parchment paper.
  4. In a medium bowl combine flour through pepper.
  5. In a large bowl, cream the butter. Add sugar and beat until light & fluffy. Add the eggs, beating well, add zest and vanilla.
  6. Stir in the dry ingredients, then add the nuts. Don't over mix.
  7. Tip dough onto floured work surface. Divide into two pieces.
  8. With floured hands, form into logs about 12 inches long and 2 inches wide. Quickly place onto trays and place in center of oven.
  9. Bake for approx. 25 min or until just turning golden.
  10. Remove from the oven, let cool for 10 min or so, longer doesn't hurt.
  11. Cut on the diagonal about 3/4 wide. replace on trays cut side down and bake for 7-8 minutes or until hard as you want.
  12. Cool on wire rack. Store in airtight container.
