Pecan Jam Squares

Ingredients:

  • 1/2 cup butter
  • 1/2 cup brown sugar , packed
  • 1 cup flour
  • 1/2-3/4 cup strawberry jam
  • 1 cup pecans , coarsley chopped
  • 2 eggs
  • 1 cup packed brown sugar
  • 2 tsp vanilla
  • 1 tbsp flour
  • 1/4 tsp baking powder

Directions:

  1. Set oven to 350 degrees.
  2. Grease a 8-in square baking dish.
  3. FOR CRUST: Mix butter, sugar and flour until crumbly.
  4. Press into prepared baking dish.
  5. Bake for 15 mins; remove, spread with jam.
  6. FOR TOPPING: Beat eggs, brown sugar, vanilla.
  7. Sift together flour and baking powder, add to egg mixture and beat well; add chopped pecans.
  8. Spread over jam.
  9. Bake 25 mins longer.
  10. Cool completely.
  11. Sprinkle with icing sugar.
  12. Cut into squares.
