Ingredients:

  • 2 medium size pears, chopped (1 1/2 cup)
  • 1/4 tsp ginger
  • 1/4 tsp baking powder
  • 1 1/2 tsp salt
  • 1 tsp soda
  • 3/4 tsp cinnamon
  • 3 large eggs
  • 1 1/2 cup sugar
  • 1 cup oil
  • 1 1/2 tsp vanilla

Directions:

  1. Preheat oven to 350 degrees.
  2. Mix dry ingredients.
  3. Beat eggs well, add sugar, oil, vanilla, and lemon rind.
  4. Blend in flour mixture.
  5. Add vegetables, pears and nuts.
  6. Mix well.
  7. Pour into 3 smll loaf pans or 2 large pans.
  8. Let stand 5 minutes.
  9. Bake for 40-45 minute in small loaf pans or 65 minutes in large loaf pan.
