Peanut Butter Sandwich Cookies

Ingredients:

Directions:

  1. COOKIES
  2. Cream the butter and sugars until light and pale. Beat in the egg then the peanut butter.
  3. Sift together dry ingredients; then fold into the peanut butter mixture just until blended.
  4. Roll into 1 balls and place on greased or lined baking sheets; press down with a fork .
  5. Bake at 250F for 12-15mins. Cool.
  6. FILLING
  7. In a small bowl cream the sugar, butter and peanut butter until smooth.
  8. Add the heavy cream; beating until smooth and fluffy.
  9. Stir in chopped peanuts and chocolate.
  10. Sandwich 2 cookies with a scant teaspoon of the filling.
  11. Store, sealed at room temperature or in the refrigerator.
  12. ** I like to melt some semisweet chocolate and drizzle it over the finished cookies.
