Peanut Butter Pudding

Ingredients:

  • 1/2 cup sugar
  • 2 tbsp cornstarch
  • 1/4 tsp salt
  • 1 1/2 cups milk
  • 1/2 cup half-and-half
  • whipped cream

Directions:

  1. Combine first 3 ingredients in a medium-size heavy saucepan; gradually whisk in milk and half-and-half.
  2. Bring to a boil over medium heat, whisking constantly.
  3. Boil, whisking constantly, 1 minute.
  4. Remove from heat (pudding will be thin).
  5. Add peanut butter and vanilla, whisking until smooth.
  6. Pour into a bowl; place plastic wrap directly over warm pudding.
  7. Chill 2 hours.
  8. Garnish, if desired.
