Peanut Butter Mini Chocolate Chip Cookies

Ingredients:

  • 1 tbsp water
  • 2 cups flour
  • 1 1/2 cups sugar
  • 1/2 cup butter
  • 1/2 cup peanut butter
  • 2 eggs
  • 1 tsp salt
  • 1 1/2 tsp vanilla extract
  • 6 oz miniature semisweet chocolate chips , 1 cup

Directions:

  1. Preheat oven to 375°.
  2. In a mixing bowl with electric mixer at low speed, beat water, flour, sugar, butter, peanut butter, eggs, baking soda, salt, and vanilla until just blended.
  3. Increase mixer speed to medium and beat for about 2 minutes, scraping sides of bowl from time to time. Stir in the mini chocolate chips.
  4. Drop batter by heaping teaspoonfuls about 2 inches apart on large baking sheets. Bake 12 to 15 minutes, or until golden brown.
  5. Remove to wire racks to cool. Store in tightly covered container for up to 3 weeks, or freeze in batches.
