Pea Soup--No Meat

Ingredients:

  • 1 large onion
  • 4 large carrots
  • 5 celery ribs
  • 4 small potatoes
  • 3 tbsp olive oil

Directions:

  1. Rinse peas, set aside.
  2. Chop all veggies, season with salt, and saute in olive oil.
  3. Add peas and 2 quarts water.
  4. Cook until done.
  5. Puree, adjust seasonings.
